Earthwork Volumes Between Specified Elevation Ranges

Working on a road project through Army Corp land that requires cut/fill mitigation. There are 5 elevation zones that we need to mitigate any cuts and fills between these different elevations. I am brainstorming what would be the easiest way to calculate these volumes at each elevation zone. It would be convenient to be able to do so using Geopak Earthwork, but would be open to other ideas as well.

Currently, I have been troubleshooting several ideas, but not making any progress.I can get Earthwork to run correctly when existing ground is within Zone 1 and does not cross any zones. At each Zone elevation there is a horizontal line drawn with a unique linestyle and each are defined as a proposed undercut in Earthwork. I cannot find a way to close out the last remaining Zone 1 shape (since it follows existing ground) therefore I have the Proposed Finished Grade having a material of "Zone 1" and the remainder is defined as such. However, if the existing ground is in Zone 3 and Earthwork cannot find a proposed undercut lines for Zone 2, then it defines the Zone 3 volune as Zone 1 (the remainder between proposed finished ground less any proposed undercuts) See below:

I think I know what needs to be done, but not sure how to do it. Is there a way (preferably in Roadway Designer) to create a surface that follows the existing ground, only to a specified elevation then rides that elevation until (if) it intercepts existing ground again then follows that? Such as in the picture below? This way I could define each zone as a proposed undercut and the line would follow existing ground if the existing ground were in multiple Zones.

Open to any suggestions. Thanks in advanced.
